How To Prevent Peppers from Burning
I always choose pre-cooked sausage when I’m making sausage and peppers in the oven because it takes less time to cook. The longer it takes to cook the sausage, the higher the chances that your peppers will burn.
If you do choose a raw sausage that takes longer than 25 minutes to cook thoroughly, add the sausage to the sheet pan first and cook it for 10 to 15 minutes before adding the peppers and onions. Then you can cook for the recommended 25 minutes so that the veggies are soft and tender.

Here are all the steps you need to make this keto sausage and peppers recipe. There are only three steps to follow and the whole dinner takes just 30 minutes to make!
Step 1 – Slice the Ingredients
Before you even get to slicing, preheat your oven to 400°F (200°C). This is the perfect temperature for roasting veggies. Any lower and you won’t get the beautiful brown charred edges. And any higher and you risk burning the peppers before the sausages cook.
Slice your peppers about ½ inch thick and your sausage into 2-inch chunks. I like to keep the onions in larger pieces because a couple of people in my family don’t like onions and this makes it easier for them to pick around.
Step 2 – Season Everything Well
Transfer everything to a baking sheet and drizzle the oil. Add the oregano, salt, and pepper, and toss everything to coat with all the seasonings.
Try to get all of the ingredients into a single layer. This will help the baked sausage and peppers to cook evenly.
Step 3 – Bake The Sausage and Peppers in the Oven
Place the sheet pan into a 400°F (200°C) oven and bake for 25 minutes total. I like to set my timer for about 15 minutes and give everything a quick toss in the middle of cooking to prevent any burning.
After you give everything a stir, continue to bake for another 10 minutes until the sausage is cooked through and you start to see some char marks and brown edges on the peppers.
Remove the pan from the oven as soon as everything looks browned to your liking. I like to see some crispy sections of onion and deep golden color on the sausage. You can eat this, as is, right out of the oven. Or you can serve it with one of the side dishes that I recommend later on!

Sheet Pan: This is really the only thing you absolutely need for this dinner! I like to use a non-stick sheet pan to make cleanup easy. But you can also take that a step further and line the pan with parchment or foil for no dishes! If you use foil, I recommend giving it a quick spray with cooking spray to prevent sticking.
Flexible Cutting Board: One of my favorite kitchen tools, a flexible cutting board makes transferring your sliced ingredients to the baking sheet a breeze.
Chef’s Knife: A good, sharp chef’s knife is ideal for slicing peppers and onions uniformly. The more evenly everything is cut, the more evenly it cooks.
Italian Baked Sausage and Peppers
I love to tweak this recipe slightly and give it an Italian flavor! Swap the bell peppers and use only green bell peppers. Then you’ll follow the same steps as the original recipe. But after 25 minutes of cooking, sprinkle a good handful of mozzarella, Parmesan, or Italian blend cheese over the top of everything and let it bake a few minutes more until melted. This is still low-carb and delicious!
If you add cheese, I do recommend that you use parchment paper that’s been coated with cooking spray before baking! This will prevent a sticky mess later.
If you’re not following a keto or low-carb diet, you can serve this hot on a soft roll. Kids love it and it’s a great way to sneak in some veggies.
