12 oz smoked beef sausage (or sausage of your choice)
3 bell peppers
2 tablespoons olive oil
1/2 teaspoon dried oregano
Salt
Pepper
Before you even get to slicing, preheat your oven to 400°F (200°C). Slice your peppers about ½ inch thick and your sausage into 2-inch chunks.
Transfer everything to a baking sheet and drizzle the oil. Add the oregano, salt, and pepper, and toss everything to coat with all the seasonings.
Place the sheet pan into a 400°F (200°C) oven and bake for 25 minutes total. After you give everything a stir, continue to bake for another 10 minutes. Remove the pan from the oven as soon as everything looks browned to your liking.
