Snacking can be difficult when you follow a low-carb diet. Trying to find finger foods and small bites that fit into dietary restrictions is a challenge. But there are a few very simple and easy-to-make recipes for keto-friendly snacks and these keto cheese chips are one of the best. 

The most basic keto cheese chips recipe has just one ingredient. And I’m sure you can guess what it is. That’s right, it’s cheese! But there are some really tasty variations to these cheesy chips that you can make with only one or two other ingredients. Keep reading for the classic keto cheese chips recipe and a couple of other flavorful options.

How To Keep Keto Cheese Chips From Sticking

The biggest challenge with this super simple recipe is making sure the cheese doesn’t stick to your baking sheet. I’ve had the most luck with using parchment paper and spraying that generously with cooking spray.

If you don’t use parchment paper, make sure you use a non-stick baking sheet. Even with a non-stick sheet, I still also recommend that you use cooking spray. This will help stop the chips from sticking after you bake them. 

Instructions

Here are all the steps you need to make these basic keto cheese chips. And there aren’t very many! These are as easy as they seem and even more delicious.

Step 1 – Grate the Cheese

Shredded cheddar cheese

Use a box grater to grate one cup of cheese. That’s about X ounces or half of a small block. Now is also a great time to preheat your oven to 400°F (200°C).

This is a step you cannot skip. I know it’s tempting to buy pre-shredded cheese, but I promise it’s worth it to shred your own. Pre-shredded cheese is wonderful stuff, but it has a coating on it that won’t melt as smoothly as freshly shredded cheese. Since this recipe is entirely cheese, you want it to melt perfectly. 

Step 2 – Make Piles of Shredded Cheese

Line a large baking sheet with parchment paper and coat it well with cooking spray.

Take heaping tablespoons of shredded cheese and pile them a few inches apart on the baking sheet. Sprinkle the tops with a small pinch of kosher salt and freshly cracked black pepper.

Step 3 – Bake the Cheese Chips

Place the heaps of cheese into the preheated oven. Bake for 7 to 9 minutes until the cheese has melted and just barely started to crisp around the edges. Don’t wait for the cheese to brown too much, by that point they’ll be overdone! You want to take them out when the edges look a little dry and the middle still looks a bit melty.

Step 4 – Let them cool and enjoy!

Remove from the oven and let them cool for 2 minutes. Transfer them to a paper towel-lined plate to cool completely. 

Cookware Used

Here’s everything you need to make this keto snack. Just like the ingredients and the instructions, the cookware needed is also very simple.

Box Grater: Since you only need a cup of cheese for one serving of these cheese chips, I like to use a box grater to quickly grate the cheese. However, if you were going to make a big batch of these for a party, use the grating disc on your food processor to speed this step up!

Baking sheet: A large non-stick baking sheet is ideal for these chips.

This one is a family favorite. Instead of using cheddar, swap for grated parmesan. Or you could do half parmesan and half mozzarella. Along with the salt and pepper, add a sprinkle of dried oregano and a dash of garlic powder.

Spicy Ranch Keto Cheese Chips

This one is perfect for parties. Use cheddar cheese like the original recipe, but add a small sprinkle of cayenne pepper to the cheese before baking. Then a dash of dried ranch dressing mix as soon as the chips come out of the oven. If cayenne is too spicy for your taste, you can also try chili powder.

Taco Cheese Chips

Another party favorite, you can give these a little kick with some pre-made taco seasoning sprinkled on before baking. Or, you can easily do this yourself by doing a small pinch of chili powder, cumin, and smoked paprika to each chip. If you have some limes on hand, this is an excellent cheese chip for some added lime zest!

How To Store Keto Cheese Chips

If you somehow happen to have leftovers of these tasty bites, you can keep them in a ziptop bag at room temperature for about 3 days. They will not be as crispy if you store them, though. You could also reheat them quickly in an air fryer or toaster oven (or even in your regular oven for a few minutes).
