Introduction
Pancakes are my kids’ favorite breakfast. I used to make them with Spelt flour as a less-processed alternative to traditional white wheat flour, but lately, I’ve been incorporating a new flour into my routine–oat flour.
The best part of oat flour is that it is gluten-free. Be sure to buy a gluten-free certificate flour to avoid cross-contamination.
My strawberry pancakes recipe is super easy to make. Best of all, you just need 5 ingredients!
Ingredients
- 1½ cups oat flour
- 10 strawberries
- 1 apple
- 2 eggs
- 1 cup almond milk
How to Whisk The Eggs
Egg is a very popular ingredient in baking. You can beat egg whites and the yolk together, egg yolks on their own, or just the egg whites. It all depends on the recipe. Egg yolks and egg whites are very different in composition. Egg whites are over 80% water, whereas egg yolks have less water and more protein.
If you want your pancakes to be extra fluffy, whisk the egg whites separately with a bit of salt to soft peaks. Add the egg yolks and keep whisking until well combined.
Instructions
1 – Wash the Fruit
Remove the stems from the strawberries and put them in a glass bowl with the apple. Cover the fruit with water and add a splash of apple cider vinegar. Leave them to rest while you prepare the batter.
2 – Whisk the Egg Whites
Separate the egg whites from the yolks. Beat the egg whites until stiff. This will give the pancakes a fluffier texture.
3 – Add the Egg Yolks
Once your egg whites are white and fluffy, add the egg yolks and beat them together until everything is well combined.
4 – Add the Almond Milk
Once everything is well combined, add the almond milk. I use an unsweetened version. Mix everything together.
5 – Add the Oat Flour
Add the oat flour and stir until combined.
6 – Wash and Slice the Strawberries
Now we’re ready to wash the fruit with clean water. Place the fruit in a strainer under running water. You can also change the dirty bowl water for clean water (without vinegar).
Once the fruit is washed, slice the strawberries.
7 – Add the Strawberries
Fold the sliced strawberries into the batter.
8 – Add the Apple
Grate the apple and add it to the mixture. I used a Pink Lady apple because they are super sweet and will add some moisture to the pancake. You can use whatever variety you prefer. Mix until combined.
9 – Cooking Time!
Add a tablespoon of extra-virgin olive oil to grease the griddle or frying pan. Instead of olive oil, you can also use butter, coconut oil, avocado oil, etc. I use a kitchen brush to distribute the oil evenly.
Once the oil is heated, put a couple of tablespoons of mixture in the pan. Wait until bubbles begin to form on the surface, then flip with a spatula. Usually, it only takes a couple of minutes. Wait until the pancakes are golden, then place them on a plate lined with kitchen paper to remove any excess grease.
