All-Clad D3 Stainless Steel Collection

The All-Clad D3 Stainless Steel Cookware is the original stainless steel collection. It offers optimal cooking performance and is my top choice for premium tri-ply cookware.

This All-Clad stainless steel set features bonded construction with an aluminum core, a magnetic stainless steel exterior, and a stainless steel interior.

Stainless typically distributes heat poorly, but when you combine it with super-conductive aluminum, it results in the perfect combo.

Constructing tri-ply cookware eliminates hot spots and allows the cookware to hold heat evenly for a long time. It’s also compatible with induction cooking and all other cooktops.

All-Clad stainless requires low or medium heat on the stovetop to prevent stuck-on food. You should also preheat the empty pan and then add oil or butter before adding food.

If water makes a sizzling sound and rolls when it hits the pan, you know your pan is sufficiently preheated. If it evaporates, your pan is too hot and you should lower the heat.

Even though you should avoid high heat on the stovetop doesn’t mean the cookware isn’t oven-safe. This All-Clad cookware set can handle oven and broiler temperatures up to 600°F (315°C). That’s enough to cover everyday cooking.

The All-Clad Copper Core Collection is my top pick for premium copper core cookware. It features several precisely formulated layers to provide the ultimate cooking performance.

This All-Clad copper core cookware has a stainless steel cooking surface and an exterior of magnetic stainless steel, making this set compatible with induction cooktops.

The interior consists of two layers of pure aluminum, with a copper core in between. That’s a total of five layers, ensuring unparalleled heat transfer and superior heat distribution.

The All-Clad copper core collection can also go in the oven. These pans are oven-safe and broiler-safe for temperatures up to 600°F (315°C).

Cleaning the copper core collection can be tricky. The polished stainless steel exterior has a copper band that is prone to fading and tarnishing. This set is not dishwasher-safe for that reason.

It’s important to hand wash All-Clad copper core cookware. You can use nylon scrubbing pads or a fine powder cleanser to treat stains or stuck-on bits of food. But use caution when cleaning the outside. You can get a copper-specific cleaner to help restore shine.

I also recommend cooking on low to medium heat. Too high a heat can make tarnishing worse.

All-Clad D5 cookware is another popular stainless collection that uses bonded cookware technology to optimize heat transfer and distribution. It’s my pick for premium 5-ply cookware.

The All-Clad D5 cookware features a stainless cooking surface and exterior, two layers of aluminum, and a patented stainless steel core. This unique stainless steel cookware has five layers designed to have superior heating performance.

Although you should use low to medium heat on the stovetop, you can put your All-Clad D5 stainless steel pan in the oven or under the broiler up to 600°F (315°C).

And since each D5 All-Clad pan is compatible with every type of cooktop, you can have maximum versatility with your cookware.

As with the D3 collection, I recommend washing your D5 cookware by hand. Avoid steel wool or steel scouring pads and stick to nylon scrubbing pads or a soft dish cloth.

All-Clad Non-Stick Collection

This All-Clad HA1 collection is the most unique of the cookware sets listed. Instead of a stainless steel interior, this set features a nonstick cooking surface. It’s my choice for premium non-stick cookware.

The hard-anodized aluminum interior offers even heating, warp resistance, and durability, while the cooking surface naturally releases food. With three layers of non-stick coating, it’s a lot more durable than your average non-stick pan from a box store.

These nonstick pans can go in the oven for temperatures up to 500°F (260°C). That’s lower than the other sets, but still high enough to handle almost any normal dish.

But if you’re looking to put this non-stick cookware under the broiler, you’ll be disappointed. This set is not broiler-safe.

This All-Clad HA1 non-stick cookware is also compatible with all cooktops, including induction. The tempered glass lids are great for monitoring food, but they aren’t oven-safe.

Nonstick cookware poses a challenge with cleaning, however. This set is technically dishwasher-safe, but All-Clad recommends hand washing.

I recommend cleaning with warm water, mild dish soap, and a soft cloth or even perhaps a soft brush. Steel wool or steel scouring pads will scratch the cooking surface.

Are All-Clad Lids Oven-Safe?

All-Clad’s stainless steel lids look nice and work great on the stovetop, but unfortunately, they’re not safe for oven use. The same goes for the glass lids that come with the nonstick cookware.

All-Clad lids are not designed for oven use. If you need an oven-safe lid, other cookware brands like Calphalon and Cuisinart make oven-safe lids for those dishes that require it.

Safety Considerations When Using the Stainless Steel Collection in the Oven

It may be obvious, but you should always use oven mitts or pot holders to remove All-Clad pans from the oven. The stainless steel handles will be hot!

Using too high a heat can warp a lesser pan, but that shouldn’t be an issue with All-Clad cookware. The All-Clad Copper Core, D3, and D5 collections can all handle high oven and broiler temps without problems. And the All-Clad Nonstick Cookware has a max oven temp of 500°F (260°C), so it shouldn’t warp, either.

The biggest thing is to let a hot pan cool before cleaning it. Thermal shock will damage even the best of pans.

And even though most All-Clad cookware is safe for metal utensils, they can still scratch the surface. I would use wooden or silicone cooking tools, instead.

Sometimes a rainbow discoloration or brown or blue stains appear on a stainless steel cooking surface. While it can be a nuisance, it won’t affect the cookware’s performance, only its appearance.

This rainbow effect is known as “heat tint,” which is simply an oxidized layer produced by the chromium in the stainless alloy. Heat tint is more likely to happen at high cooking temperatures.

If you can live with it, then, by all means, carry on. But if you can’t stand the discoloration, you can use vinegar or commercial stainless steel cleaners like Bar Keeper’s Friend to remove it.

All-Clad’s non-stick cookware also performs well in the oven but has a max temp of 500°F (260°C). That’s still hot enough to cover everyday cooking tasks, but you can’t put this cookware under the broiler.
