Breakfast Casserole: What you need to start the day!

Ingredients

  • 1 lb. frozen sweet potato hash browns or home fries
  • 1 yellow onion, diced
  • 2 tablespoons chili powder
  • 8 large eggs
  • 1 1/4 cup whole milk
  • 1 lb. breakfast sausage
  • 5 oz. extra sharp white cheddar cheese, shredded
  • 1/2 bunch kale, about 2 cups firmly packed when chopped
  • Greek yogurt for serving

 

Instructions

Cook Sausage and Veggies

While the sausage is cooking, preheat the oven to 350°F (177°C).

Cook the breakfast sausage and diced onion until the sausage is brown and cooked through and the onion soft and translucent, about 7-8 minutes.

Add the kale and cook until softened, about 3 minutes, set aside

Whisk Eggs, Milk, and Spices

Whisk the eggs, milk, chili powder, and shredded cheese together in a large bowl. Set aside.

Layer the Casserole

Spread the cooked sausage, kale, and onions on the bottom of a 9×13 baking dish. Add the sweet potatoes on top.

Pour the egg and milk mixture over everything and make sure everything is evenly dispersed.

Bake the Casserole

Place the casserole dish in a 350°F (177°C) oven and bake for 30 minutes. The eggs should be set, and the top should just start to brown.

If the top begins to brown before the eggs are set, cover loosely with foil and cook until set.

Serve with Greek Yogurt

The secret ingredient in this recipe is a healthy dollop of Greek yogurt on top of the perfect slice of breakfast casserole.
